Aiden's Meatloaf....

The boy created this today and wants to make sure it makes it to Pinterest, so here we go. :) Aiden’s Mexican Meatloaf 2 lbs ground beef 2 c crushed tortilla chips 2 cans Rotel 1 small can enchilada sauce (or a large can, and use half to pour over the top) 1 chopped onion 2 eggs 1 c shredded cheese 1 T taco seasoning salsa tortillas Preheat oven to 350*. Mix all ingredients together. Place in sprayed pan. Shape into a loaf. Pour salsa or enchilada sauce over the top. (We did half and half to see which we liked better. It was a tie. Next time, we’ll do both!) Put in oven until temperature hits 170*, about an hour and a half. I served this with corn, refried black beans, and tortillas! (By the way, my mom helped a little.) Disorder cocktail, anyone?

(***Disclaimer: This is purely a commentary on my own life and not to be taken as downplaying any of the referenced disorders.) I’m not a doctor, and I don’t play one on TV. However, as I was looking at my train wreck of a house, I realized that I need an excuse. And everyone knows a medical excuse is way better than any other kind, so I’ve decided to create mine. The way I see it, I suffer from ADHD, bipolar disorder, and CDO, (which you may recognize as OCD, but I prefer to see the letters in alphabetical order). If you’ve known me any length of time, you know that ADHD isn’t a stretch. Or deniable. Just ask any of my teachers. Ever. Being still while not completely absorbed in what I’m doing will not happen. No way, no how. (Pausing now to go put on socks…it’s 30 degrees under my floor.) Okay, I’m back. Yes, I found several other things to do on my way back downstairs. I threw away a pen today.

A working pen. A pen, that when I dragged its tip across the paper, produced an unbroken blue line. But I threw it away. What do I have against blue pens? Or more importantly, what's the big deal about a pen? Well, if you asked that, you've never met me. I have a thing for pens. Especially cool pens. Or free pens. Or pens that come in sets. Or waterproof pens. Or permanent pens. Oh, and markers. And pencils. So yeah, I have a problem. Well...looking at this picture, I guess I have a problem with office supplies in general. Oh. And clearance items. I have a problem with clearance items. And computers. I have a problem with pens, markers, pencils, office supplies, clearance items, and computers... And none of these pictures show the box(es) of pens I have at school. I have a problem with collecting things, and keeping those things, even if I don't have a place to put them. Or a need for them.
