Aiden's Meatloaf....

The boy created this today and wants to make sure it makes it to Pinterest, so here we go. :)



Aiden’s Mexican Meatloaf





2 lbs ground beef
2 c crushed tortilla chips
2 cans Rotel
1 small can enchilada sauce 
(or a large can, and use half to pour over the top)
1  chopped onion
2  eggs
1 c shredded cheese 
1 T taco seasoning
salsa
tortillas






Preheat oven to 350*. Mix all ingredients together. Place in sprayed pan. Shape into a loaf. Pour salsa or enchilada sauce over the top. (We did half and half to see which we liked better. It was a tie. Next time, we’ll do both!) Put in oven until temperature hits 170*, about an hour and a half.

I served this with corn, refried black beans, and tortillas!

  2. This was delicious! What a great creative twist on meatloaf. I'll bet Aiden has created plenty of great recipes since he created this one!
